This cheesy ale soup is hearty and delicious.
Ingredients
Directions
- Sauté onion in olive oil 3 minutes. Reduce to medium heat and add carrots and celery.
- Sauté 5-7 minutes further. Sprinkle in all purpose flour. Stir.
- Add broth, milk and beer (may use pale ale). Cook 5-7 minutes or until foam disappears and soup thickens.
- Stir in cheddar cheese and simmer 15-20 minutes.
- Serve with toasted bread and a garnish of more cheddar if desired.
