Roasted Pepper Egg Bites

Easy, delicious, and low-carb recipe.

Ingredients

Directions

  1. In a blender, combine eggs, cottage cheese, onion powder, garlic powder, black pepper, and salt.
  2. Chop your bell peppers and sauté.
  3. In a greased cupcake or muffin pan, pour the egg mixture equally into each muffin cup. (Does not have to be lined).
  4. Distribute the chopped peppers equally into each egg mixture and then add the mozzarella cheese on top.
  5. Bake in a preheated oven to 350°F for 23 minutes.
