with turkey bacon, and low fat cheese, this is a great snack or mexican side dish once in a while but a waiste in calories, not for regular eating

I have had something similar, but the pepper and cheese was sandwiched between slices of deer steak that was marinated in italian dressing - you can change the meat to lean beef steak or even chicken breast pieces if you don't like deer and adjust the dressing mix used for your particular diet. (i.e. less sugar, light oil, etc.)

This recipie looks great and I can't wait to make it!! For those of you who prefer the breaded poppers you could probably roll them in ground nuts (almonds, macadamias, hazelnuts, or walnuts) instead of wrapping with the bacon. That would add more monounsaturated heart healthy fat and make them a little more like the poppers we're all used to. I may try both ways!!
