Zucchini Noodles

A great pasta substitute.

Ingredients

Directions

  1. With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
  2. Continue making ribbons as you turn the zucchini to get all the green part off first.
  3. When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
  4. Heat a large skillet on medium high.
  5. Add the olive oil and zucchini "noodles."
  6. Saute the "noodles" for 2 to 3 minutes.
  7. Season with freshly grated black pepper and salt if desired to taste.
  8. Serve with your favorite pasta sauce. I like to eat these with red sauce & meatballs!

I added 1 tablespoon of soy sauce, spinach, a few drops of spicy seseame oil, and 1 egg and it was great and still under 100 cal. Thank for the idea

This was great!! I sliced up a zucchini and sauteed with 2 tsps of evoo, salt and pepper and some Prego heart healthy pasta sauce. Delicious dinner and only 150 calories!

OMG I tried this last night in place of pasta in a recipe I make all the time, I LOVED IT, even my husband like. As a celiac it's great instead of using high price gf pasta. I am going to also use it under talapia next week. Can't wait

are this crunchy? or how are they suppose to turn out? mine didn't look like the picture they just looked like zucchini? I really liked them just not sure they turned out right?

I LOVE pasta so thankyou for this recipe!!! Fabulous! My poor husband can now start to enjoy his pasta again while I eat the substitute lol! Thankyou!

loved it! This is going into my pasta-alternative staples along with spaghetti squash! (But this is much easier to cook and prepare!)

WOW!!! This was an excellent recipe! I just cooked the zucchini according to the directions and we ate them, they were fantastic!!! (no pasta sauce needed in my opinion) But I do have to agree with "280love", when they said that the "noodles" shrink quite a bit though, so make more than you think you need. Two zucchini would definitely not be enough for two people.

It's a great concept and the noodles are pretty flavorful if they brown a bit.
