This was very tasty. It only made one serving of vegetables (1 and 1/2 cups) for me, though :(. I thought they were a great noodle substitute. They didn't quite get soft, but that kind of gave it an al dente feel. I only used 1 tbsp of oil and a 10" skillet and they seemed to come out just fine. Next time I'm going to try simmering them in a little chicken broth (yum).

I made this for my cooking class at my Senior Center and they loved it. I topped it with the chicken capri recipe and it was a huge hit.

saute a can of drained mushrooms, add some butter,whippping cream and the sliced zucchini, melt cheese over it... wonderful!!!
