Zucchini Noodles

A great pasta substitute.

Ingredients

Directions

  1. With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
  2. Continue making ribbons as you turn the zucchini to get all the green part off first.
  3. When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
  4. Heat a large skillet on medium high.
  5. Add the olive oil and zucchini "noodles."
  6. Saute the "noodles" for 2 to 3 minutes.
  7. Season with freshly grated black pepper and salt if desired to taste.
  8. Serve with your favorite pasta sauce. I like to eat these with red sauce & meatballs!

I love pasta and of course it's one of my biggest cravings when "dieting"..this was surprisingly AMAZING. I had it with some pasta sauce and I could not tell the difference between this and pasta. Thanks so much for this recipe!! (it also allows me to build more veggies into my day!!)

They look nothing like the pic. i think to achieve the same result as the pic they have to be deep fried. i did it as per the instructions and i will never do it again. i prefer the cauliflower rice.

I used a julianne (sp?) slicer to make thin spaghetti like strips and sauted them for a few minutes, added some meat sauce and a little cheese on top and it tasted almost like the real thing!! Will definitely be making this again!!

I'm with Maggie!!! This was an absolute do over for us... tad of red cooking wine and garlic!! It was awesome!! I can have this once a week with different squashes... We are thinking about doing it with summer squash tonight!!

OMG this was great!!! I recommend using more than 2 zucchini!!! I added a little garlic while frying it up and a tiny bit of red cooking wine!!!! SOOOOO GOOOD!!!

Very good for the low-GI diets. Add some nice tomato sauce or a little feta-cheese, and you're perfect for phase one and two.
