Egg and Sausage Muffins

The no excuse breakfast! These faux muffins are worthy of serving to guests.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C). Spray muffin tin with cooking spray like Pam (can also use mini bundt muffin pan).
  2. Spoon cooked sausage in to the tin, filling 1/2 way.
  3. Mix eggs, cream and other additions (optional: cheese, salsa, bacon, onion - be creative) together and spoon on top of the sausage until almost full.
  4. Bake for about 20 minutes, until eggs are done and slightly golden.
  5. Remove from oven and let sit for a couple minutes. Gently use a spoon to remove the "muffin like" creations.

These were so good and it makes enough for left overs. I added onions and green peppers. Love them!

I love heating these up in the mornings. I used leftover ham, skim milk, and added finely chopped onion, cerlery and green peppers. Topped off with pepper and dill. Yum Yum!

Tough on the kitchen but great for Atkins. I just finished cleaning the mess in the oven after making these. I suggest dropping the eggs to 10 and cooking the muffin tin on top of a cookie sheet. Also, I'd advise using foil muffin cups in the tin for easier removal and clean-up. I spent more time cleaning up after this than cooking. Think I'll stick to frying up sausage patties and scambling my eggs. The taste was fine though.

My favorite recipe of all in phase 1. Used fat free shredded cheddar. Tried with bacon too but i liked the sausage better. Thank you so much for this recipe!

This was a wonderful recipe! I enjoyed the nice change. I added salsa and low fat cheese to mine. Mine actually made a dozen and half. I think perhaps it's due to the size of my muffin tins?

This sounds great, but i'm begining to realise american is another language. What is cream that's half and half? what sort of spray is Pam?

Absolutely Atkins Induction safe. It's always good to seek sausage that is nitrate free as well.
