Egg and Sausage Muffins

The no excuse breakfast! These faux muffins are worthy of serving to guests.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C). Spray muffin tin with cooking spray like Pam (can also use mini bundt muffin pan).
  2. Spoon cooked sausage in to the tin, filling 1/2 way.
  3. Mix eggs, cream and other additions (optional: cheese, salsa, bacon, onion - be creative) together and spoon on top of the sausage until almost full.
  4. Bake for about 20 minutes, until eggs are done and slightly golden.
  5. Remove from oven and let sit for a couple minutes. Gently use a spoon to remove the "muffin like" creations.

I tried this n only made a half batch, I used a mini mufgin tin n papers...the taste was ok n thats all would be better with ham and low fat or fat free cheeses i will try this next.....not really liking the sausage and plain egg ones....

This has become one of our family favorites. I also recommended them to a friend who runs a B & B. Her guest love them. Also, these are fairly delicious hot OR cold.

This is a great recipe, I've been making something similar for a while but I put a little dab of cream cheese on the meat before i pour the eggs in... then there is like a hot yummy surprise in the middle..

All the foods are edible in the first phase. You just need to use caution with the sausage as too much and you can be eating too much grease - not good for the heart. (substitute any meat for the sausage for variations)

I like this because not only would it be yummy but my kids'd love it too - especially if I used a mini muffin tray!... Two birds with one stone! lol
