Classic Mashed Cauliflower
A great substitute for mashed potatoes.
Ingredients
Directions
- Chop cauliflower into flourettes, boil until very tender (about 10 minutes).
- Drain and place in a blender or food processor.
- Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached.
- Season with salt and pepper and/or chives to taste. Serve immediately.

I didn't like the texture at all. Also there wasn't much favor to it. I added a little parmesan cheese. I added salt. Nothing seemed to work. It's definitely not a good substitute for mashed potatoes.

Sis not care foe the overall flavor and the texture was way to mushy/baby food like for my taste. Did not remind me of mashed potatoes at all.

I love mashed cauliflower but i add some hellmanns mayo to mine i know it's high in fat but you can use light mayo and i know it may sound weird to but that's my mom's secret ingredient in her mashed potatoes it makes them creamier and more flavorful!!

Texture was terrible but that could just be because I'm overly sensitive. I really, REALLY tried to get this as smooth as possible but in the end, if I want mashed potatoes, I'll eat them (calories, fat, carbs & all).

TO CNJ4755 so happy is correct. You still must count the points but you are supposed to include these foods every day. With WW you count everything you put into your mouth! But WW works. Love mashed cauliflower. Another way to do it is to roast it w/ a little bit of EVOO...

This has always been a favorite of mine. I love the taste of just the cauliflower, olive oil (or vegan butter) and a little tiny pinch of salt, but this is a great base for Cajun, Thai or Indian styles by adding crushed red pepper, ginger and lime, curry, etc. respectively.

i was not crazy about this...it seemed like it constantly needed something to give it more flavor. i'd add salt but it wouldn't be enough. also, the texture was not very pleasing. any suggestions out there to make it better???
