Directions
- Add the olive oil to the pot.
- Cut all Roma tomatoes and add to the pot.
- Turn the pot on medium heat.
- Pour in tomato puree after 5 minutes and smash the tomatoes into chunky bits.
- Add garlic, salt, and other spices.
- Once the pot begins to bubble, add in chopped cherry tomatoes, tomato paste, and chicken broth.
- Take off the heat once all tomatoes are soft (cherry tomatoes should still hold shape).
- Emulsify or blend the soup. Serve and enjoy.
