A quick toss-together and bake meal that's great for hungry families.
Ingredients
Directions
- Preheat oven to 350 °F (175 °C).
- Coat bottom of an 8 x 11" baking dish with olive oil spray. Set aside.
- Brown ground beef. Drain well.
- Add chopped red bell pepper and chopped spinach to ground beef and mix together.
- Pour ground beef mixture in to baking dish. Use a spatula or wooden spoon to evenly distribute the mixture.
- Sprinkle 1 cup (half a bag) of the shredded cheddar cheese over the mixture.
- In a separate bowl, scramble together 5 eggs. Add salt and pepper to taste. Pour eggs over beef mixture.
- Bake at 350 °F for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Cut into slices or squares.

This was good, but needs a little extra flavor. I did substitute the spinach for green beans. I would make this again!

wow! this was really good...i changed it up a bit with chopped garlic,onions,bacos, and used some leftover seasoned turkey taco meat...delicious, and good with ff sour cream and salsa on top!

I would add some spices, I added cumin and coriander and chili powder, probably a quarter teaspoon of each.
Like Margo said, I would probably use egg substitute as well, instead of eggs (or at least a mixture.

This is great. I was only sorry when I found my plate empty. And it is very flexible, I added in seasonal vegtables and it worked very well.

I am going to try this tomorrow evening! I have made something real similar to this and really enjoyed it so I will mix things up a bit with this recipe!

No one in my family would eat this. I think if you aren't crazy about spinach you could use french style green beans and that would be much better.

Did this with ground turkey, as well, forgot the eggs (they weren't missed) My husband loved it, it was really good
