A quick toss-together and bake meal that's great for hungry families.
Ingredients
Directions
- Preheat oven to 350 °F (175 °C).
- Coat bottom of an 8 x 11" baking dish with olive oil spray. Set aside.
- Brown ground beef. Drain well.
- Add chopped red bell pepper and chopped spinach to ground beef and mix together.
- Pour ground beef mixture in to baking dish. Use a spatula or wooden spoon to evenly distribute the mixture.
- Sprinkle 1 cup (half a bag) of the shredded cheddar cheese over the mixture.
- In a separate bowl, scramble together 5 eggs. Add salt and pepper to taste. Pour eggs over beef mixture.
- Bake at 350 °F for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Cut into slices or squares.

The meat comes out a bit bland, so I added taco seasoning and it was REALLY good!

This is a good recipe for phase 1 but lacks in flavor! I used ground turkey instead of beef for less calories. I do think that it would be better with a ricotta cheese on it to give it some moisture! Maybe I will try that next time....

Yummmmmy so good cooked it yesterday and loved it! i would recommend adding more spices it was a little bland but i loved it.

I added tomatoes and onions and used fresh spinach so it was a complete meal. I used ground beef and not FF shredded cheese but full fat. Everyone in my family liked it- next time I think I make it I will add garlic

Let me tell you...this recipe is so incredibly versatile. I have made it at least 3 times. I have frozen my left overs, great. I have eaten it on lettuce & topped with sour cream, YUMMY! Also I have used a small left over portion in my omelet, YES! However, you may want to use more egg if you are using a larger pan because it is a bit crumbly but I & my diet buddies have loved it every single time I have made it and all the "alternatives"!!

**This is higher in fat then what it claims.** The ingredients call for only 4 oz of cheese but the directions tell you to add 8. Plus, 5 eggs?? One serving of this is a WHOLE lot more fatty then it is represented in the nutrition facts. ...But, it tastes really good. We substitued Southwestern Egg Beaters and lean ground beef.

This is a fabulous dish. It's great for breakfast, lunch or dinner. Maybe should use 1/2 Turkey italian sausage and 1/2 lean ground beef to make it a little more flavorful.

I used ground turkey instead of beef and this recipe turned out great! The next time I make this dish, I will mix some skim milk with the eggs so it will be little more creamier. Great quick recipe!
