Turkey Enchilada Casserole

Sensational layered tortillas and ground turkey with enchilada sauce and reduced fat cheese.

Directions

  1. In a 5 to 6-quart pan over high heat, stir turkey, onion, garlic, oregano, and cumin in oil until turkey is crumbly and no longer pink, about 4 minutes.
  2. Stir in 1 cup enchilada sauce. Add salt to taste.
  3. Meanwhile, cut tortillas in half. Arrange a fourth of the halves evenly over the bottom of a shallow 3-quart casserole, overlapping to fit.
  4. Sprinkle a 1/4 of the cheese evenly over the tortillas, then top with 1/3 of the turkey mixture and a 1/4 of the remaining enchilada sauce, spreading each level.
  5. Repeat to make two more layers of tortillas, cheese, turkey mixture, and sauce; top with another layer of tortillas and sauce, then cheese.
  6. Bake in a 425° F (210° C) regular or convection oven until cheese is melted and casserole is hot in the center, 18 to 20 minutes.
  7. Sprinkle with chopped cilantro.

Delicious! Tastes so good you won`t believe its so low calorie. Made with whole wheat tortillas instead of corn. A little too much enchilada sauce for me, so may substitute half of it for something like salsa next time.

It was pretty good. Might recommend a bit of salsa instead of some of the enchilada sauce. Also, there are lower calorie corn tortillas than recommeded in this recipe.

I made this tonight and loved it but I did make some adjustments. Here are the ingredients that I used: * 1 small can tomatoes with chiles * 1 can black beans * 10 oz ground turkey breast * 4 tsp minced garlic * 1 1/2 cups enchilada sauce * 4.5 oz shredded monterrey jack cheese * 12 corn tortillas * 1 tsp cumin * 8 tsps ground oregano * 1 tsp olive oil * 1/4 cup chopped fresh cilantro * 1 large onion

This was a great and simple recipe. I added a can of black beans and a 1/3 of the NF sour cream. Made enough for lunch for the next day.

The family loved it but I did add sour cream to the sauce. We made a double batch for seven people and had PLENTY left over.
