Turkey Enchilada Casserole
Sensational layered tortillas and ground turkey with enchilada sauce and reduced fat cheese.
Ingredients
Directions
- In a 5 to 6-quart pan over high heat, stir turkey, onion, garlic, oregano, and cumin in oil until turkey is crumbly and no longer pink, about 4 minutes.
- Stir in 1 cup enchilada sauce. Add salt to taste.
- Meanwhile, cut tortillas in half. Arrange a fourth of the halves evenly over the bottom of a shallow 3-quart casserole, overlapping to fit.
- Sprinkle a 1/4 of the cheese evenly over the tortillas, then top with 1/3 of the turkey mixture and a 1/4 of the remaining enchilada sauce, spreading each level.
- Repeat to make two more layers of tortillas, cheese, turkey mixture, and sauce; top with another layer of tortillas and sauce, then cheese.
- Bake in a 425° F (210° C) regular or convection oven until cheese is melted and casserole is hot in the center, 18 to 20 minutes.
- Sprinkle with chopped cilantro.

It was very good. I used whole wheat tortilla shells and made it in a 9x13 pan. Very flavorful and great with some green beans as a veggie.

Where do you get the enchilada sauce? Is it sold in the grocery store--I haven't heard of it before!

delicious!! We added in 2 tbs of diced jalapenos and it gave it the perfect little kick.

very simple to make I also did not add all that oregano

I used less oregano, but I think it needed to be cut down more as the oregano is over powering. I did use half the cheese and only 9 tortillas. It all fit in a 2 qt casserole dish to make it nice and thick!
I think this is definitely a good start for something healthy. I think it would be yummy with sour cream but I didn't have any. :(

Very good! I used regular cheese, only 10 tortillas, and a regular pound package of turkey. When I figured the calories I came up with 310 per serving. The regular cheese made it taste rich and not like a lo-cal meal.
