Delicious hearty peppers stuffed with ground beef, rice, onion and tomatoes.
									Ingredients

									Directions

									- Pre-heat oven to 350 °F (175 °C).
 - Cut tops off green peppers and remove seeds and membrane. Precook green pepper cups in boiling salted water about 5 minutes; drain. Sprinkle inside of cups generously with salt.
 - Cook lean ground beef and onion till meat is lightly browned. Season with salt and dash of pepper.
 - Add tomatoes, water, uncooked long grain rice, and Worcestershire sauce.
 - Cover and simmer till rice is tender, about 15 minutes.
 - Stuff peppers with mixture; stand upright in 10 x 6 x 1/12" baking dish. Bake uncovered for 20 to 25 minutes.
 - After simmering you can optionally stir in a cup of shredded American sharp cheese into the mixture before stuffing the peppers if desired.

This is one of my favorite recipes. I have made it a handful of times now and is always a winner. I always use fresh tomatoes instead and is just as good.

I switched out ground turkey for the ground beef & used Rotel instead of canned tomatoes. Very yummy! Great leftovers too! I will definitely be making this again!

I substitute "Boca" or "Morning Star" crumbles instead of lean ground beef, and we cannot tell the difference. Also, easy to switch out the rice for brown rice and the American Cheese for lowfat Mozzarela (for taste mostly)

Very easy to prepare. I did add a can of tomato sauce to the recipe for extra flavor and served it with mashed potatoes. For WW people, the entire meal was 10 pts total for dinner. My family loved it! Will definitely cook this again
