Delicious!! I used vegetable oil like the recipe stated but next time I will use olive oil. I cut the recipe in half and just sprinkled the salt, pepper, and thyme onto the carrots. The carrots were very tasty and I enjoyed the ease of this recipe. When I lowered the heat, I lowered it to 'Low' and after 10 minutes, the carrots were still a little hard in the center. Next time I will only lower the temp to '2'.

Bland! Not nearly enough spice for me. Doubled the thyme and added a 1/2 tsp. rosemary and sage. Now it's tasty!

A great way to get the olive oil serving in for the day! I gave it a 5 star as I was delightfully surprised at how tasty this made the baby carrots!
