Egg and Sausage Muffins

The no excuse breakfast! These faux muffins are worthy of serving to guests.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C). Spray muffin tin with cooking spray like Pam (can also use mini bundt muffin pan).
  2. Spoon cooked sausage in to the tin, filling 1/2 way.
  3. Mix eggs, cream and other additions (optional: cheese, salsa, bacon, onion - be creative) together and spoon on top of the sausage until almost full.
  4. Bake for about 20 minutes, until eggs are done and slightly golden.
  5. Remove from oven and let sit for a couple minutes. Gently use a spoon to remove the "muffin like" creations.

We found these very easy to make, not that messy, and so delicious. I made 12 as the recipe called for, and the next time, will add a few more ingredients. Added Onion, and Cheddar Cheese.

Can easily be revamped into a lower fat version. Great to make at night and reheat in the a.m. for a quick on-the-go breakfast.

I made mine with cheddar cheese and real bacon bits from a jar. They turned out perfect! Very easy and yummy!

This was a great recipe and such a useful thing to make sure we can get breakfast and out of the house quick in the morning. Just reheat in the microwave and your ready to go. I cut the eggs to 10 and you're definitely best to go with a silicone muffin pan as they just don't stick at all to the silicone. Thanks!

Loved Them!!! Put a little cheese in with mixture and it turned out great. Use foil muffin cups it will save you from a big mess.

These were really tasty & easy to make. I made these in those silicone type muffin pans on top of a cookie sheet & clean up was a breeze! They warm up in the microwave well too!
