Crockpot Chicken Chili

A delicious, low fat, high fiber and hearty meal.

Ingredients

Directions

  1. Drain beans.
  2. Combine beans, onion, tomato sauce, diced tomatoes with chilies, and taco seasoning in a slow cooker.
  3. Place whole (thawed) chicken breasts on top and cover.
  4. Cook on low for 10 hours or on high for 6 hours.
  5. Half hour before serving, remove chicken breasts and shred. Return chicken to slow cooker and stir back in.
  6. Top with fresh cilantro, reduced fat cheese, and/or light or fat-free sour cream. Serve with cornbread, low-fat chips, or rice.
  7. Note: this makes a lot and it is even better the next day for lunch!

Loved it! Used 12 oz ground turkey and 12 oz lean ground beef (just cuz I had them). Put mine on a bowl of lettuce like a taco salad. Husband and brother who was visiting enjoyed it too. Liked the combo of black beans/kidney beans.

I measured the weight once it was all cooked... 77.8 oz .. Then divided it into the 10 servings of 7.8 oz each... It looks like a small portion.. But it's very filling

Could someone tell me how much exactly (oz)is one serving? I want to try this right away.

Maybe because I have been more selective and cutting down on the food I eat, but I thought it was great. I put 1/4 cup of sharp cheddar cheese on it. Also, it wasn't clear as to whether or not the chicken was supposed to be skinnless boneless or with skin and bones. I chose the latter. I just used the two breasts out of pick of the chix and it was plenty of meat.

My whole family loved it! I just added a little Mexcian blend shredded cheese to it. I even froze the leftovers for future lunches. YUMMY

Awesome - made this yesterday for dinner. My father is a meat kind of guy and he loved this. I added just a little spice to the chicken before placing it into the crock pot, but this was very tasty. Will make it again.
