Crockpot Chicken Chili

A delicious, low fat, high fiber and hearty meal.

Ingredients

Directions

  1. Drain beans.
  2. Combine beans, onion, tomato sauce, diced tomatoes with chilies, and taco seasoning in a slow cooker.
  3. Place whole (thawed) chicken breasts on top and cover.
  4. Cook on low for 10 hours or on high for 6 hours.
  5. Half hour before serving, remove chicken breasts and shred. Return chicken to slow cooker and stir back in.
  6. Top with fresh cilantro, reduced fat cheese, and/or light or fat-free sour cream. Serve with cornbread, low-fat chips, or rice.
  7. Note: this makes a lot and it is even better the next day for lunch!

The serving size says "1 serving." What is that? 1 cup? If so, it needs to say 1 cup, not 1 serving.

Really, really good! Maybe too good. I went back for another half serving and really had to make a stand to not go back for even more. This is the first thing I've cooked in my new crockpot. I was amazed at how tender the chicken was; it just fell apart when I went to shred it. I served it with grated cheddar cheese and a serving of Doritos (only tortilla chips easily available here). My family liked it as much as I did. The only thing I wish is that the recipe specified how much one serving is. It's very hard to estimate what 1/10 of the entire batch is. I went with one cup of chili, which is probably a bit large for the calorie count given.

We seasoned it ourselves, instead of the taco seasoning, and it was absolutely wonderful!

Wow, this is really great! I made just a couple of substitutions: I added a LARGE can of diced tomatoes with their juice, so instead of tomato sauce I did tomato paste (I worried that the extra liquid would be too runny otherwise). Really, I think it would have been fine just adding the tomatoes; this was not at all soupy or runny. And wow, what a great smell when I walked into the house tonight. I served with fresh cilantro, a pinch of cheese, sour cream & a squeeze of fresh lime plus Baked Tostito Scoops. ps, this made about 8 cups for me, so a serving is a generous 3/4 c. Try this!
