A super tasty chicken capri dish that's great for everyone.
Ingredients
Directions
- In a blender or food processor, combine the ricotta with the oregano, salt, and pepper. Process to blend.
- Rub the chicken with the garlic powder. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 12 minutes per side.
- Place the chicken breasts, side by side, in a large baking dish and allow to cool.
- Preheat the oven to 350° F (180° C).
- Spoon 1/4 cup of the cheese mixture and 1/4 cup tomatoes onto each chicken breast. Top each chicken breast with 1 slice mozzarella.
- Bake for 20 minutes, or until a thermometer inserted in the thickest portion of a breast registers 170° F (75° C) and the juices run clear.

I don't care for ricotta cheese so I used cottage cheese instead. So good!

My husband and I really enjoyed this. My 11 and 4 year old ate it no problem. My 8 year old asked what all that "stuff" was on her chicken (l.o.l.) can't please all the people...right?

I really liked this! I eat a lot of chicken, so it's easy for me to get bored with it, but this was VERY easy to make and good. I gave it four instead of 5 because you really need to eat it the same day.

Fixed it last night for our first day on the diet. I halved the recipe for the two of us and fixed the cauliflower "mashed potatoes" and had brussel sprouts as sides. We each only ate 1/2 a large chicken breast as we were full. It was delicious! Probably one of the better dishes we've had in a while AND it was perfect for Phase 1!
