A quick toss-together and bake meal that's great for hungry families.
Ingredients
Directions
- Preheat oven to 350 °F (175 °C).
- Coat bottom of an 8 x 11" baking dish with olive oil spray. Set aside.
- Brown ground beef. Drain well.
- Add chopped red bell pepper and chopped spinach to ground beef and mix together.
- Pour ground beef mixture in to baking dish. Use a spatula or wooden spoon to evenly distribute the mixture.
- Sprinkle 1 cup (half a bag) of the shredded cheddar cheese over the mixture.
- In a separate bowl, scramble together 5 eggs. Add salt and pepper to taste. Pour eggs over beef mixture.
- Bake at 350 °F for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Cut into slices or squares.

I really liked this recipe...my husband thought it was a little plain. There is room in this recipe however to make changes for personal taste!

very very good. I made it tonight with salad and green beans. Even the husband liked it and he is a meat and potatoe man.

This was very good and very easy to make. I would recommend changing the cooking temperature to 400 °F for 15-20 min. I could probably do without the eggs next time, but if you like eggs it's a great touch.

REALLY really good... doesn't look appetizing when making but comes out good enough looking to serve to others and was shocked how well the pieces cut without braeking. All liked it when served!

My family loved this! I added mushrooms and onions. I'm a bit confused on the portion sizes. I made it in a 9x9 and cut into 9 servings, served it with a multiple-grain roll and salad. Very filling.

i loved it as well. I am Hispanic so I sort of "mexicanized" it if you will. While the beef was cooking I chopped up half of a roma tomato, some onion, and cilantro. I tossed them in while the beef was almost done. I 1 cup egg beaters and mixed shredded Monterrey and cheddar cheese. I gave it four stars because as a dinner dish sides are limited because it has eggs. Other than that, I think it could be great for breakfast too!
