Cheesy Beef Bake

A quick toss-together and bake meal that's great for hungry families.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Coat bottom of an 8 x 11" baking dish with olive oil spray. Set aside.
  3. Brown ground beef. Drain well.
  4. Add chopped red bell pepper and chopped spinach to ground beef and mix together.
  5. Pour ground beef mixture in to baking dish. Use a spatula or wooden spoon to evenly distribute the mixture.
  6. Sprinkle 1 cup (half a bag) of the shredded cheddar cheese over the mixture.
  7. In a separate bowl, scramble together 5 eggs. Add salt and pepper to taste. Pour eggs over beef mixture.
  8. Bake at 350 °F for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Cut into slices or squares.

I loved this recipe! I added Taco seasoning to it and then also added a lil cayenne pepper. I also sauteed the peppers before adding them. I loved it!

Made it with ground turkey. Almost tasted like a big omlette :)

I made a recipe almost identical to this. It added low fat cottage cheese (creamy!) and 1/2 can Rotel. Plus, i threw in some leftover taco meat. TASTY! Also, on the pkg of cheese it says 1oz is 1/4 cup, so. . . 1 cup would be 4oz. It's the difference between weight vs volume.

My first attempt at this was a failure because I added peas instead of the other veggies. This time I took the veggies out completely and it was delish!

I liked this really well but for me it needed to be kicked up a notch. The next time I made it I used a Monterey Jack/cheddar blend of cheese, added a little chili powder, garlic powder, onion powder and turned it into a Mexican type casserole. Both my husband and I loved how it turned out.

I did a bit of tweaks. 1-I used ground turkey (undrained) season with cumin 2-I used tomatoe sauce, otherwise its too dry 3-Used Mexican cheese for more flavor

I love this dish. I think I've made it twice now and I've got what I need to make it again. It's great for breakfast or dinner. Oh..and I buy the bagged spinach, not frozen. It works just as well.

This was very good...tweaked it a little used half the hamburger, used fresh spinach, added a few mushrooms and a green onion. Very, very good!!!
