Directions
- Cream butter until light and fluffy.
- Add lemon zest and sugar, and beat for 4 minutes.
- Add vanilla extract and eggs one at a time.
- In a separate bowl, sift and whisk other dry ingredients.
- Slowly combine the two mixtures, along with yogurt.
- Preheat oven to 425°F.
- Lightly grease muffin tins and fill each 3/4 full.
- Bake for 5 minutes at 425°F, then drop down to 400°F and continue baking for another 15 minutes until the center have set.
