A great pasta substitute.
Ingredients
Directions
- With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
- Continue making ribbons as you turn the zucchini to get all the green part off first.
- When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
- Heat a large skillet on medium high.
- Add the olive oil and zucchini "noodles."
- Saute the "noodles" for 2 to 3 minutes.
- Season with freshly grated black pepper and salt if desired to taste.
- Serve with your favorite pasta sauce. I like to eat these with red sauce & meatballs!

This sounds great! We use spaghetti squash in place of pasta for spaghetti, but zucchini would be even more diet friendly for me and my bf. We're going to try it. Thank you!

I wish I had found this when my garden was putting out more zucchini than I could eat! I will be trying this soon though. I also love to use spaghetti squash for the pasta.

It was delicious! I will be making it again. My husband who is not a fan of Zucchini loved it and said he would eat it again.

Well I had to use water to saute the noodles because I had no idea my dad had no oil, not even veggie, but that was only the first bump in the road. When I when to find sauce, all I found was the mushroom kind my aunt left here. My dad, and I both dislike mushrooms. Since I was going to add spices to the sauce, I just gave up and added them to the noodles. Then at tat point I figured maybe, just maybe, with all the added spices, we wouldn't taste the mushroom much or at all.
Let's just say, it tastes great! I just hope he thinks so, and I'm not telling him what it's made of until he tries it. ;)
Too bad I forgot the noodles shrink so there's only enough for one, but now next time I know it'll be even better! Plus I'll make sure I have ALL ingredients ahead of time.
