Grilled Stuffed Zucchini
Great tasting cheesy zucchini boats.
Ingredients
Directions
- Cut zucchinis in half lengthwise; scoop out pulp, leaving a 1/4" shells.
- Brush with 2 teaspoons oil; set aside. Chop pulp.
- In a large skillet, sauté pulp and onion in remaining oil.
- Add garlic; cook 1 minute longer. Add bread crumbs; cook and stir for 2 minutes or until golden brown.
- Remove from the heat. Stir in the mozzarella cheese, mint and salt.
- Spoon into zucchini shells. Sprinkle with Parmesan cheese.
- Grill covered, over medium heat for 8-10 minutes or until zucchini is tender.
- Note: you can also make them in the oven.

Spoon this mixture into the zucchini shells, sprinkle with Parmesan cheese, and grill covered over medium heat for 8–10 minutes or until the zucchini is tender. It was just ok for me..... I was expecting more :( Wasn't a terrible dish.... I baked it instead of grilling!!!

Love this recipe. I baked it in the oven at 350 for 30 minutes. I did not use mint, but crushed red pepper instead. This is soooooooooo yummy!

I ate the whole zucchini and called it dinner. I also called it delicious.
I'm thinking about making it again for dinner but switching it up with squash :)
