An excellent low carb substitute for pancakes.
Ingredients
Directions
- In a small bowl, beat egg white with electric mixer until stiff peaks appear. Set aside.
- In a large bowl, beat cream cheese until smooth.
- Beat egg yolks, sweetener, cinnamon, salt and flaxseed meal into cream cheese.
- Fold in the egg whites.
- Heat large heavy fry pan over medium low heat. Grease lightly with butter.
- Form pancakes using about 1/4 cup of the batter for each pancake. Cook until golden brown, about 2-3 minutes on each side. Don't rush - if the temperature is too high, the butter will burn.
- Note: can be served with butter, fruit, whipped cream, whatever you like. I made syrup by mixing sugar free honey substitute with artificial maple extract.

These pancakes were fabulous and easy to make. My hubby loved them and didn't know they were low carb. They're sweet enough not to need syrup, we used butter and a small amount of whipped topping. One tip, once the batter is on the griddle, spread it out a little so they're flat. They don't spread on their own and they can get a little raw in the middle if not spread out.

These are really good. I substituted Stevia for the splenda and they still came out excellently.
