Cheesecake Pancakes

An excellent low carb substitute for pancakes.

Ingredients

Directions

  1. In a small bowl, beat egg white with electric mixer until stiff peaks appear. Set aside.
  2. In a large bowl, beat cream cheese until smooth.
  3. Beat egg yolks, sweetener, cinnamon, salt and flaxseed meal into cream cheese.
  4. Fold in the egg whites.
  5. Heat large heavy fry pan over medium low heat. Grease lightly with butter.
  6. Form pancakes using about 1/4 cup of the batter for each pancake. Cook until golden brown, about 2-3 minutes on each side. Don't rush - if the temperature is too high, the butter will burn.
  7. Note: can be served with butter, fruit, whipped cream, whatever you like. I made syrup by mixing sugar free honey substitute with artificial maple extract.

I'm not a huge fan. I had to spread them thin to get them to cook all the way, and they turned out like little crepes, not pancakes. But they were pretty good rolled up and stuffed with ricotta creme.

These pancakes were not my favorite...They were too eggy for me, though they were better with ricotta creme on top. Maybe I'll wait for phase 2 or 3 to do whole wheat pancakes.

A bit tangy because of the cream cheese. But overall a good alternative if you can't have pamcakes at all. :)

I left out the flax seed for the Induction Phase, but they were superb! I really don't like eggs, and these weren't all that eggy! I made a few batches ahead for the week and froze them!

These are a favorite at my house. It helps to let the cream cheese come to room temp before mixing in. You can also stick it in the microwave for 30 seconds first. I don't put sweetener in the pancakes, but I use s/f syrup on top.
