Cauliflower Fried Rice

Grated cauliflower instead of rice is both delicious and low carb.

Ingredients

Directions

  1. Grate the cauliflower using either the largest holes on a hand grater or with the grating blade in food processor. The results should almost resemble the size of cooked white rice.
  2. Heat oil to cover the bottom of a small skillet on medium-high.
  3. Quickly stir-fry the white of the onions and the garlic. Watch closely so as not to burn.
  4. Add the cauliflower; fry about 4-5 minutes, stirring constantly until it begins to color a bit. Don't overcook or it might get mushy.
  5. Stir in the soy sauce. Push the cauliflower to one side of the pan; pour in the beaten egg.
  6. Lightly scramble the egg briefly then mix into the cauliflower.
  7. Add the green onion tops and toss.
  8. Note: add some chicken and make it a meal!

This was a great recipe! I used 1 tsp of garlic instead of 2, but that's just my personal taste. Going to keep this recipe around!

Deeeelicious! I added some carrot and frozen peas, used low sodium soy sauce. This is a brilliant dish!!!

My kids weren't too crazy about it but I really enjoyed this. I served it with pork tenderloin. I followed the recipe but added frozen peas at the end. Excellent!

Sorry, but my husband and I did not care for this at all. It endeed up in the garbage.

I really loved this dish, however my family did not. I will make it again, just smaller portions.

I made a simular dinner for the family but I stir fried 1 lb of medium shrimp with the egg onion and garlic and a little more soy sauce before adding the cauliflower. I waited untill we 1/2 done with dinner to tell them they we were eating cauliflower not rice. They loved it. what a great meal.
