This can't be anything but yummy. I do like using American cheese because of how it melts smoothly. If you use more cream and bring the cream to a light boil and then stir in the cheddar until it melts, that works really well too.

Made this last night loved it. I used Kraft block cheddar and had trouble getting it to melt so had a few "chunks" of cheese. Is there a better cheese that will melt smooth?

You could also use fat free evaporated milk. Make sure the chicken broth is 99% fat free too. I would also add some onion and garlic or other seasoning.

You could cut down on the fat in this recipe by using fat free chedar and just regular homogenized milk. The milk still has fat, but nothing like the cream would have. It would still taste rich, yet the fat would almost be cut to nothing. I'm gonna try it :-)

Sounds absolutely wonderful; this is one of my favourite soups - but this would truly crucify my diet.

use American cheese instead of cheddar cheese, if you'd like...it has better flavor, but if you are really counting your carbs stricly like me, use a mixture of the cheddar cheese and american!!!!
