These baked and battered poppers have minimal points but maximum flavor.
									Ingredients

									Directions

									- Pre-heat oven to 350 °F (175 °C). Coat a large baking sheet with cooking spray.
 - In a medium bowl, combine cream cheese, cheddar cheese and mayonnaise; mix well and set aside.
 - Halve the jalapenos lengthwise and remove seeds. (Oil and seeds from the peppers can be irritating - wear gloves or put plastic bags over your hands. And do not rub your eyes.)
 - Stuff jalapeno halves with cream cheese mixture.
 - Place egg substitute in a shallow dish. Place cereal crumbs in a separate shallow dish.
 - Dip stuffed jalapeno halves into egg substitute and then roll in cereal crumbs to coat.
 - Transfer jalapenos to prepared baking sheet and coat with cooking spray.
 - Bake until filling is bubbly, about 30 minutes. Serve hot.

This recipe is not Atkins friendly! If you use full fat instead of low fat and omit the cereal its closer to an inductions friendly food.

I'm gonna make these and use real mayo to cut out the carbs and roll them in ground flaxseed, reducing the carb count even more! Can't wait to try them!

I've made something similar and it sure beats the deep fat fried batter coated ones you get in bars & restaurants.

I made these for Super Bowl Sunday and they were as good as the real thing. I took the tip from the commenter above and used Panko crumbs instead of corn flakes. They were crispy and delicious.

This sounds great ! You could probably lighten this by using PANKO instead of cereal flakes too. YUM ! I love poppers, and haven't had them in a LOOOOONG time !
