Belgian Waffles

A great substitute for waffles.

Ingredients

Directions

  1. Preheat waffle iron. If no waffle iron is available, recipe can also be used for fluffy pancakes, but that is not as much fun!
  2. Beat eggs with electric mixer on high for 1 minute to make them light and fluffy.
  3. Add all other ingredients (nutmeg is optional). Beat until smooth.
  4. Spray waffle maker with PAM or other cooking spray. Pour all batter, should fill bottom tray. Close and cook as usual for waffles.
  5. Top with Smart Spread or other butter substitute, a sprinkle of splenda, and/or some sugar free syrup.
  6. Serve with V8 for a complete and satisfying breakfast.

WOW..Tried these this morning and I was pleasantly surprised. I want to add that my 10 year old son had them as well and he saw me sprinkle a little splenda on them and he was telling me that he felt that the waffles tasted like fried dough that you get at the carnival..LOL So if thats not a great review WHAT IS? LOL

I made these just this morning. They were great. I will give them to the kids next time. I am sure they will like them too! I did them as pancakes as well, and will try in the waffle iron too!

This is really very good! I make these several times a week and it's so great! I use a small amount of sugar free syrup once done, delicious!

I also made these as pancakes. My son loved them. He could not tell the difference. Very easy to make.

I made these as pancakes without the baking powder and only 1 pack of splenda. They were great. the serving was huge. I split the plate with my picky 4 year old and there wasn't a bite left. He has already asked me to make them tomorrow!
