Curried Sweet Potato Chickpea Stew

A vegan-friendly dish with a satisfying depth of flavor.

Directions

  1. Peel and dice sweet potatoes. Steam for 15 minutes.
  2. In a large pot, put chickpeas, tomatoes, water, and vegetable base. Bring to simmer over medium heat.
  3. Add spinach and cook for about 3 minutes or until wilted.
  4. Add steamed sweet potatoes, green onions, cilantro and spices. Simmer uncovered for 5 minutes.
