Golden Spirit Bran Muffins

Delicious, healthy, and easy to prepare.

Directions

  1. Preheat oven to 400°F.
  2. In a large mixing bowl, cover the bran flakes with milk. Using the back of a mixing spoon, mash cereal into the milk so that all cereal is in contact with the milk.
  3. Combine the flour with brown sugar, baking powder, cinnamon, and salt in a medium mixing bowl. Mix well.
  4. Add egg and oil and beat slightly. Add egg mixture to cereal mixture and stir until well combined.
  5. Add the dry mixture ingredients about ⅓ at a time, mix well, and repeat until all dry ingredients are fully incorporated.
  6. Divide the mixture into muffin tins and bake for 20 to 25 minutes or until done.
  7. Allow muffins to rest 2-3 minutes before removing from tins. Leaving muffins to cool in the pan will keep them warm longer and make them dry.
